Boursin and Prosciutto Stuffed Mushrooms

Please wash mushrooms and pat dry before class. Stems can be removed, keeping the mushroom caps for stuffing. Oven or toaster oven is required.

Ingredients:

  • 24 white mushrooms, stems removed
  • 2 tablespoons of olive oil
  • 1/4 teaspoon of salt
  • 1/8 teaspoon of pepper
  • 1 package of #Boursin Garlic and Fine Herbs Cheese
  • 1 ounce Prosciutto slices, chopped thin
  • 2 teaspoons of minced fresh chives
  • Dash of parmesan cheese (optional)

Cucumber Lemonade Vodka Cocktail

Pre-prep directions for homemade lemonade (OR substitute for store bought lemonade). Prep ‘homemade lemonade’ one day before class. If you wish to make homemade lemonade here's how!

Homemade Lemonade Ingredients:

  • 1/2 cup honey
  • 1 cup of lemon juice (approximately =5-6 lemons freshly squeezed)
  • 6 cups of cold water

Directions: in a small pot boil one cup of water and add honey, stir until honey is fully dissolved. Set to the side and cool for 10 mins, then add squeezed lemon and juice and remaining water. Stir thorough. (option to add fresh lemon slices or hints of mint. Place mixture in the fridge for the cocktail the next day).

Cocktail Ingredients:

  • 1 cucumber (1/2 cup roughly chopped)
  • 1/4 cup of fresh mint leaves
  • 4 oz of vodka (any brand) / (or alternate option to use cucumber vodka)
  • 2 cups of lemonade (store bought or homemade option)
  • ice (5-6 cubes)

A muddler is helpful tool for this drink or use a spoon to mash.
